One Pot Pumpkin Chili
Makes about 8 servings.
INGREDIENTS:
2-3 TBSP coconut oil
3 cups chopped onion
8 cloves garlic, chopped
1 pound ground meat (pork, beef, lamb, game, poultry...)
1 - 28 oz can diced tomatoes
2 cups pumpkin puree
1 can chicken broth
4 teaspoons dried oregano or basil (or a combo of both)
2 teaspoons chili powder
1 teaspoon ground cinnamon
1 teaspoon salt
METHOD:
- In a large pot, saute the onions and garlic in coconut oil for about five minutes, until tender.
- Add the ground meat and cook for about five minutes.
- Add the rest of the ingredients, stir and bring to a gentle boil
- Simmer uncovered for about 20 minutes.
*If your child is too thick, add more chicken broth or water to thin it out
"Oopsie" Bread
These little low carb marvels were supposedly a “mistake”. Pretty good mistake!
I can’t take credit for this mistake (for once, that’s a good thing), but do not know exactly who to give credit to.
There are several variations of the “Oopsie Bread” recipe on the internet. This is the best that I have found. They are easy and are firm enough to hold a sloppy homemade stuffed burger and all of the condiments and toppings.
INGEDIENTS
Makes 6 Oopsies
3 eggs, separated
1/2 cup cream cheese, softened
1 pinch salt
1/2 tablespoon unflavored psyllium husks (Metamucil)
1/2 teaspoon baking powder
METHOD
Preheat oven to 300d F and move the oven rack to the middle position
-Whip the egg whites together with the salt until very stiff (like meringue). You should be able to turn the bowl over without the egg whites moving.
-Mix the egg yolks and the cream cheese well. Add the psyllium seed husk and baking powder.
-Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites. Do it in that order... do not mix the yolks into the whites... it won't work as nicely.
-Put 6 oopsies on a baking tray with parchment paper and bake for about 25 minutes, until golden brown.
I have been told that you can freeze Oopsies... the trick is in how you defrost them. Don't put them in the microwave... thaw them on the counter or in the fridge. As soon as I try to freeze some... I will update!

Personal Cauliflower Pizzas

These cauliflower pizzas were tested out on a confirmed cauliflower hater.
The results were great!
These are great for getting some veggies into your "veggie haters"... big and small.
INGREDIENTS
1 large head cauliflower
2 large eggs
3 cups shredded mozzarella cheese
2 tsp Italian seasoning
2 teaspoons garlic powder
1 cup pizza sauce
pepperoni, bacon or sausage... sliced thin
1 tomato, sliced
1/4 cup finely shredded Parmesan cheese
METHOD
Preheat oven to 450F
Using a grater or a food processor, process cauliflower into crumbles. Save out 4 cups and store the rest in the fridge or freezer for future pizzas.
Cook cauliflower in microwave in a large microwave-safe bowl for 10 minutes. Allow to cool for 10 minutes.
Add eggs, 2 cups shredded mozzarella cheese, Italian seasoning and garlic powder. Stir well to combine.
On baking sheets lined with parchment paper (believe me... unless you love scrubbing; you will want to do this...); divide mixture into 12 balls. Place balls on sheets and pat each into a thin round about 4 inches wide. Bake in oven 15 minutes until golden brown and the edges are dark brown.
Remove from oven and heat the broiler. While it heats, top each mini crust with pizza sauce, meat, parmesan cheeses, tomato slices and mozza. Tip... putting the mozza on last will hold everything on.
Broil pizzas until cheese is melted and tomatoes are slightly roasted, about 5 minutes (watch them so they don't burn). Remove from oven and let cool 5 minutes before serving.
