Healthy Fats. Maybe Not What You Think...

The closer to nature a fat is, the better it is for you.
If oils have to be boiled and chemically extracted, and then hydrogenated in order to be solid at room temperature... not so much!!
We have been encouraged by government recommendations, medical professionals and everyone in between to be afraid of fats, especially animal sourced fats.
If you are young enough, then you likely don't ever remember anything other than the message that fat will make you fat and cause heart disease.
And, under the right circumstances (systemic inflammation, insulin and leptin resistance and excess insulin and blood sugar levels) , it just might.
