Fat Bombs

Picture
OK... So, some of you may be wondering... what the heck are fat bombs?

Fat bombs are often used by people who are following a low carb high fat or ketogenic diet. Sometimes it can be tricky to get enough of the correct fats into a LCHF diet (without the oft added carbs), and this is especially true when travelling or eating out in our "carb bombed" environment.

I will keep adding recipes as I find them.

*** Try VERY hard not to add honey, raisins or anything sugary to your bombs. This will negate the entire idea of using fat bombs in the first place.

Almond Bombs

3/4 cup melted coconut oil
 9.5 Tbs. (150g) almond butter
60 drops (about 3/8 tsp.) liquid Stevia
 3 Tbs. cocoa
8 Tbs. (1 stick) melted salted butter

Pour a scant 2 Tbs. into each of 24 candy or mini muffin molds. I use a silicone candy mold that I bought at Michael's Crafts. If you prefer, you can use paper mini muffin cups, lined up on a cookie sheet.

Place candy mold on a small cookie sheet first, fill, then freeze. Be sure to use the cookie sheet.

Freeze for at least 30 minutes, then pop out the bombs and store them in a bag or other container in the freezer.

Lemon Bombs

4 oz cream cheese, softened
4 Tb butter, softened (1/2 stick)
4 Tb coconut oil
2 Tb sour cream
4 tsp lemon juice
4 tsp sweetener of choice

Start by creaming together the cream cheese and butter, then add other ingredients one at a time and mix well in between.
I like mine sweet/sour, so you may have to adjust your flavors to your taste. I use a silicone candy mold that I bought at Michael's Crafts, which yields about 18 bombs.

Freeze until firm, pop out and freeze or refrigerate.

Vanilla Bombs

8 ounces (227g) full fat cream cheese, preferably warmed
sweetener of choice to taste
1 dash salt
1 tsp (4g) vanilla extract
1/2 cup cream, heavy whipping

Add the first 4 ingredients to a food processor. If you don't have one, you can do this with a whisk and a bowl.

Add the cream in and mix well.

Portion into cups or a silicone treat tray and freeze.
